Apple and Sultana Turnovers
Ingredients:
4 apples
1 cup water
2 Tbsp honey
1 Tbsp corn flour
1 tsp nutmeg
1 tsp cinnamon
1 tsp vanilla essence
1/2 cup sultanas
2 sheets of puff pastry
2 Tbsp milk
Method:

Method:
- Pre-heat oven to 180 deg C.
- Peel, core and dice apples.
- In a medium saucepan, bring water, honey, nutmeg, cinnamon, corn flour and vanilla essence to the boil.
- Place diced apple in saucepan, allow to simmer with the lid on for approximately 20 minutes. Apples need to be soft but still hold their shape.
- Take off the heat and stir in sultanas.
- Thaw puff pastry on the bench to room temperature, cut the square sheet in quarters.
- On one end of the cut sheet, place a large spoonful of apple mixture. Do this 8 times to make all 8 pockets.
- Bring the other end of the pastry and cover the apple.
- Press edges together to form a seal, trim edges to make it neat.
- Brush milk on top of pockets to help with the browning process.
- Bake in oven for 15-20 minutes, or til golden brown.
- Serve hot with sugar free ice cream or cream.
