                                                                                                                        Apple and Sultana Turnovers

                                                                                                                        Ingredients:

                                                                                                                        4 apples
                                                                                                                        1 cup water
                                                                                                                        2 Tbsp honey
                                                                                                                        1 Tbsp corn flour
                                                                                                                        1 tsp nutmeg
                                                                                                                        1 tsp cinnamon
                                                                                                                        1 tsp vanilla essence
                                                                                                                        1/2 cup sultanas
                                                                                                                        2 sheets of puff pastry
                                                                                                                        2 Tbsp milk

                                                                                                                        Method:

                                                                                                                        1. Pre-heat oven to 180 deg C.
                                                                                                                        2. Peel, core and dice apples.
                                                                                                                        3. In a medium saucepan, bring water, honey, nutmeg, cinnamon, corn flour and vanilla essence to the boil.
                                                                                                                        4. Place diced apple in saucepan, allow to simmer with the lid on for approximately 20 minutes. Apples need to be soft but still hold their shape.
                                                                                                                        5. Take off the heat and stir in sultanas.
                                                                                                                        6. Thaw puff pastry on the bench to room temperature, cut the square sheet in quarters.
                                                                                                                        7. On one end of the cut sheet, place a large spoonful of apple mixture. Do this 8 times to make all 8 pockets.
                                                                                                                        8. Bring the other end of the pastry and cover the apple.
                                                                                                                        9. Press edges together to form a seal, trim edges to make it neat.
                                                                                                                        10. Brush milk on top of pockets to help with the browning process.
                                                                                                                        11. Bake in oven for 15-20 minutes, or til golden brown.
                                                                                                                        12. Serve hot with sugar free ice cream or cream.
