Banana Cake
This recipe is sugar-free, however you must be aware that bananas do contain natural sucrose. Some mutations of CSID can in fact tolerate bananas, this is an entirely individual thing and something you must discuss with your dietitian or Dr before trying this recipe.
Ingredients
1 cup wholemeal flour
1 cup plain flour
2 teaspoons baking powder
1/4 teaspoon bicarbonate of soda
1/2 teaspoon mixed spice
60 g butter or margarine
1 egg (60 g)
4 well mashed ripe bananas
1/3 cup milk

Method
- Preheat oven to 180°C.
- Greece two loaf pans.
- Sift wholemeal flour, plain flour, baking powder, soda and mixed spice into a large mixing bowl.
- In another mixing bowl, cream butter, egg and 1 teaspoon of dry ingredients -- beat well, then stir in bananas.
- fold in remaining flour mixture alternately with milk.
- Spread mixture in loaf pans and bake 25 to 30 minutes.
- Cool then serve.
