Butter Cake
INGREDIENTS
185g softened butter
1 cup powdered sweetener
1 tsp vanilla essence
3 eggs
2 cups self-raising flour
1/4 milk
METHOD

METHOD
- Preheat oven to 180* and grease a 20cm round tin
- In a large bowl, beat the butter, equal and vanilla with an electric mixer till light and creamy
- Add eggs in one at a time beating well after each addition
- Sift flour over mixture alternating with the milk, adding a third at a time. Stir in lightly
- Spoon batter into prepared tin and bake for 50 - 60 minutes, or until skewer pulls out clean
- Cool cake in tin for a few minutes before turning out onto wire rack.
- Cocoa can be added to the flour to make chocolate cake if desired.
- Ice and then serve once cool
