Butter Cookies
Ingredients
100g butter
2 Tbsp honey
150g plain flour
½ tsp baking powder
Method
1. Preheat oven to 180 deg C
2. Melt butter and honey in a small pan over a low heat
3. Sift plain flour and baking powder into a large bowl
4. Slowly stir into hot mixture until you have a good dough
5. Take small handfuls and roll into balls
6. Place the balls on a greased baking sheet and press down with a fork
7. Bake in the center of the oven for about 10 minutes
8. Remove from the heat and allow to cool on a cooling rack
Alternatives:
Add flavours to mixture before rolling into balls to spice things up a bit.
Suggestions:
· Choc Chips
· Sultanas
· Chopped dried apricots
· Poppy seeds
· Lemon Zest
· Orange Zest
· Chocolate dipped – i.e. orange zest and white choc tips
· Spices – Cinnamon, mixed spice or ginger
· Jam Drops – make a well in middle of the biscuit and add a drop of jam before baking
