                                                                                                                        Chocolate Cookies

                                                                                                                        Ingredients:

                                                                                                                        350g plain flour
                                                                                                                        100g cocoa
                                                                                                                        250g soft margarine
                                                                                                                        1 tsp baking soda
                                                                                                                        A pinch of salt
                                                                                                                        3 Tbsp sugar free strawberry jam
                                                                                                                        2 eggs


                                                                                                                        Method:
                                                                                                                        1. Preheat oven to 180 deg C
                                                                                                                        2. Beat sugar free strawberry jam and cream in a large bowl with margarine, until light and fluffy
                                                                                                                        3. Beat eggs and stir into margarine and sugar free jam
                                                                                                                        4. Sift plain flour and bicarbonate of soda, and stir in until you have a good chocolatey dough
                                                                                                                        5. Dust a surface with flour and roll dough out
                                                                                                                        6. Using a circular cookie cutter, cut into round shapes
                                                                                                                        7. Place on a greased baking sheet and position in the centre of oven
                                                                                                                        8. Bake for about 15 minutes
