Chocolate Mint Ice Cream
Ingredients:
3 egg yolks
200 g cocoa powder
3 tablespoon sugar-free strawberry jam
240 ml double cream
250 ml. Full cream milk
1 teaspoon peppermint essence
Method:

Method:
- Beat egg yolks and jam together in a large bowl.
- In a large saucepan heat milk and cocoa powder, stirring until cocoa has dissolved.
- Pour into egg and jam mixture, and mix well.
- Stir in cream and peppermint essence.
- Take a clean and airtight container and pour the mixture in.
- Place in freezer for 2 to 3 hours or until half frozen.
- Remove from freezer and mix again.
- Repeat the process at least once preferably twice.
- Freeze completely then serve as desired.
