                                                                                                                        Christmas Cookies

                                                                                                                        Special equipment required

                                                                                                                        Christmas Cookie cutters (can be found in junk shops, or department stores)
                                                                                                                        Icing piper (can also use baking paper rolled into a cone with the tip cut off at an angle)

                                                                                                                        Ingredients

                                                                                                                        300 g plain flour
                                                                                                                        200 g margarine
                                                                                                                        175 g sugar-free chocolate (See virtual store)
                                                                                                                        4 Tbsp honey
                                                                                                                        1 tsp ground allspice
                                                                                                                        1 medium egg
                                                                                                                        1 tsp vanilla essence

                                                                                                                        Method

                                                                                                                        1. Preheat oven to 180 deg C
                                                                                                                        2. In a small pan, melt honey and margarine
                                                                                                                        3. Once melted, remove from heat and leave to cool
                                                                                                                        4. In a separate bowl, beat egg then stir into honey mixture
                                                                                                                        5. Add the vanilla essence
                                                                                                                        6. Sift flour and all spice into a bowl, then pour in the liquid mixture
                                                                                                                        7. Stir until a dough is created
                                                                                                                        8. Roll into a large ball, wrap in cling film and place in the fridge to chill for about an hour
                                                                                                                        9. Lightly dust a clean surface with flour and roll out dough to about 1cm thick
                                                                                                                        10. Cut into various shapes using Christmas cookie cutters
                                                                                                                        11. Place on a greased baking sheet
                                                                                                                        12. Bake in the center of the oven for about 10 minutes, then remove and leave to cool.
                                                                                                                        13. Slowly melt chocolate in a saucepan then pour into an icing piper
                                                                                                                        14. Decorate biscuits with melted chocolate
                                                                                                                        15. Leave the chocolate to harden
