Christmas Cookies
Special equipment required
Christmas Cookie cutters (can be found in junk shops, or department stores)
Icing piper (can also use baking paper rolled into a cone with the tip cut off at an angle)

Ingredients
300 g plain flour
200 g margarine
175 g sugar-free chocolate (See virtual store)
4 Tbsp honey
1 tsp ground allspice
1 medium egg
1 tsp vanilla essence
Method
300 g plain flour
200 g margarine
175 g sugar-free chocolate (See virtual store)
4 Tbsp honey
1 tsp ground allspice
1 medium egg
1 tsp vanilla essence
Method
- Preheat oven to 180 deg C
- In a small pan, melt honey and margarine
- Once melted, remove from heat and leave to cool
- In a separate bowl, beat egg then stir into honey mixture
- Add the vanilla essence
- Sift flour and all spice into a bowl, then pour in the liquid mixture
- Stir until a dough is created
- Roll into a large ball, wrap in cling film and place in the fridge to chill for about an hour
- Lightly dust a clean surface with flour and roll out dough to about 1cm thick
- Cut into various shapes using Christmas cookie cutters
- Place on a greased baking sheet
- Bake in the center of the oven for about 10 minutes, then remove and leave to cool.
- Slowly melt chocolate in a saucepan then pour into an icing piper
- Decorate biscuits with melted chocolate
- Leave the chocolate to harden
