Coconut Cookies
Ingredients:
125g butter
1 cup powdered sweetener
1 egg
1 tsp imitation vanilla essence
1 Tbsp white vinegar
3/4 cup desiccated coconut
1 1/2 cups self raising flour
1/2 cup extra coconut
Method:

1 cup powdered sweetener

1/2 cup extra coconut
Method:
- Preheat oven to 180 deg C, grease a baking tray
- Beat butter, sweetener, egg and vanilla until smooth
- Stir in vinegar
- Add coconut and sift in flour, mix well
- Once mixed, roll tablespoon lots into balls
- Roll each ball in the extra coconut
- Place on baking tray approximately 5cm apart
- Bake for 15 minutes or til golden brown
- Cool on a wire rack before serving
