Coconut Ice
Ingredients
3 Tbsp sugar free strawberry jam (see strawberry jam recipe)
100ml double cream
250g (9oz) desiccated coconut
Red food colouring
Method:
3 Tbsp sugar free strawberry jam (see strawberry jam recipe)
100ml double cream
250g (9oz) desiccated coconut
Red food colouring
Method:
- Using a hand blender or food processor, mix sugar free strawberry jam in a large bowl with the cream.
- Stir in the desiccated coconut until the mixture becomes very dry.
- Separate in 2 bowls and add a drop of red food colouring to one.
- Grease an 18cm fudge tin and press the red coconut ice into it, making sure it is evenly distributed.
- Take the white coconut ice and do the same on top.
- Place in the fridge and chill overnight. Slice and serve.
