Coconut Jam Slice
Ingredients:
125g butter
1/2 cup powdered sweetener
1 egg
1 1/2 cups plain flour
1 teaspoon baking powder
1/2 sugar free jam (flavour is by choice - Strawberry works well)
Topping
1 egg
1/4 cup powdered sweetener
1 cup desiccated coconut
Method:
125g butter

Method:
- Preheat oven to 180 deg C
- Line and grease a 20cm square tin
- Melt butter in a big pan gently, then take off heat
- Add 1/2 cup sweetener and egg, whisking it together well
- Sift in flour and baking powder, mix it all well
- Spread evenly in tin, then spread jam evenly on top
- For the topping, put egg, sweetener and coconut in a large bowl and mix well
- Sprinkle evenly on top of slice
- Bake for 30 minutes
- Let cool on the bench before placing in fridge to harden for at least 30 minutes
- Slice when ready and serve
