Egg and Bacon Pie
Ingredients:
Double quantity Shortcrust Pastry (Click link for recipe)
4 rashers bacon
6 eggs
1/4 tsp salt
Pepper to taste
1 Tbsp chopped Parsley
Method:

4 rashers bacon
6 eggs
1/4 tsp salt

1 Tbsp chopped Parsley
Method:
- Line a lightly greased 20cm pie pan with half the pastry
- Remove the rind and chop bacon, sprinkle half into the pie pan
- Crack eggs into a bowl and mix lightly before pouring on top of pie
- Sprinkle salt, pepper and parsley on top
- Place remaining bacon evenly on top
- Glaze edge of pastry and roll remaining pastry to fit on top
- Press edges together and cut a slit i the middle of the pie
- Glaze the top of the pastry and decorate with any left over pastry
- Bake at 230 deg C for 10 minutes, then reduce heat to 180 deg C and bake for a further 20 to 25 minutes
