Gingerbread Men
Ingredients
350g plain flour
2 tsp ground ginger
1 tsp bicarbonate of soda
100g butter or margarine
4 Tbsp honey
1 Tbsp currants (optional)

- Preheat oven to 180 deg C
- Melt honey and butter in a small pan over a low heat
- Sift dry ingredients into a large bowl
- Stir the hot liquid into the dry ingredients to make a dough
- Roll out to about 1/4inch thick on a lightly floured surface
- Use a gingerbread man cutter to cut out shapes (or you can do it free hand with a sharp floured knife
- Place on a greased baking sheet and bake for about 10 minutes
- Remove from the heat. Press currants in for eyes and buttons or use sugarfree chocolate drops
