Hollandaise Sauce
Ingredients
60 g butter
3 egg yolks
1 Tbsp white vinegar
salt and pepper to taste

Method
- The trick of the sauce is that it must never over boil.
- Melt butter in a double saucepan or in a basin over hot water.
- Combine egg yolks, vinegar, salt and pepper.
- Add to melted butter. Stir briskly without stopping until the sauce is smooth and thick.
- Test and add extra salt and pepper if necessary.
