Strawberry Jam
Ingredients
2.7 kg strawberries
1.4 kg sweetener if it can be used like sugar, otherwise to manufacturer’s instructions
250 ml water
The rind and juice of lemons
1.5 tsp powdered gelatin (or vegetarian equivalent)
An extra Tbsp or two of water
Method

Method
- Rinse strawberries and remove any pieces of leaf or stalk
- Place in large pan with water, lemon rind and juice
- Bring to the boil and simmer for 15 minutes, scrapping off the scum from time to time
- Stir once in a while to prevent it from sticking
- Stir in sweetener until dissolved
- Dissolve gelatin in a Tbsp or two of cold water
- Stir into the hot mixture
- Remove from the heat
- Pour into clean jam jars and leave to cool and set.
